Preheat over 375

Saute onion and garlic in olive oil 2 to 3 mins, add ground meat and spices. Brown meat. Does not have to be fully cooked, but mostly.

Spray olive oil in 13 x 9 baking dish

Wash and tear kale into pieces, place in baking dish

Scramble eggs. add salt and pepper to taste. May want to add a little water to this step for fluffiness. Sometime I add coconut milk too.

Put browned meat in baking dish, distribute evenly

pour scrambled eggs over meat and kale

bake for 20 to 25 minutes
