Beat 3 eggs and add 1/2 cup of sugar. Beat for 3 minutes until pale yellow. Add the freshly grated butternut squash. Set aside.

Ground almonds until you have 1 1/4 cups.

Zest 2 oranges and 2 lemons.

Combine 1 cup of flour, 1 tsp of baking soda, 1/4 tsp of salt, lemon zest, orange zest and ground almonds.
