In a skillet bake flour in the oven @ 400* for 30 minutes or until brown. Meanwhile, in a large pot on medium heat, saute sliced smoked sausage in olive oil until browned. Add celery, chopped onion, garlic, green pepper until slightly cooked. Add chicken, boulion and water. Wisk in flour and season to taste. Cook for 15 minutes until chicken is done, shred chicken and add back in. Reduce heat to simmer and add shrimp, okra and tomatoes, adjust seasoning, simmer for another 15 minutes. Serve
