The first time you make this recipe, you''ll need to make up two cups of sourdough starter. You can get some dried starter from Carl''s Friends Sourdough (http:/www.carlsfriends.net). Add that to about 2 cups of flour and two cups of starter and let it sit for a day or two in a warm place. Don''t use metal bowls or utensils with sourdough.

Put 2 cups of the sourdough starter in another mixing bowl.
You can add 2 cups of flour and water to the remaining starter in the original mixing bowl to have starter for next time.

Add egg, oil, sugar to starter

Get your waffle iron hot. Once it is ready, add the baking soda to the other ingredients and mix it in. You can mix it with a little bit of water before adding it if you like. The mixture should foam up a bit and roughly double in volume (be sure to use a large enough mixing bowl).
