Mix together flour, baking soda, baking powder, cinnamon, and ginger in a small bowl. Set aside. In a medium bowl, combine sugar, bananas, egg whites, applesauce, and vanilla. Mix well, then add dry ingredients all at once and stir or whisk to combine. The mixture should be oatmeal-colored and lumpy. Pour into a nonstick or greased 9x5 baking pan, and bake at 325 deg. F for 60-70 minutes, or until a toothpick comes out with moist crumbs. Take out of oven and set on cooling rack (bread will finish cooking in pan). When cool, turn over and remove from pan. Serves 8.
