In a medium bowl, whisk together 1 cup all purpose flour, 1 tsp baking powder, 1/2 tsp baking sod, 1/2 tsp salt, and 1/2 tsp ground cinnamon. Set aside.

In a large bowl, cream together 2 tbsp unsalted butter, 1/2 cup sugar, and 1/2 cup brown sugar.

Add 1 large egg, 1/4 cup unsweetened apple sauce, and 1/2 tsp vanilla extract. Stir until combined.

Add in the flour mixture a little at a time, stirring until it is all incorporated.

Add the 2 cups quick oats, 1/2 cup flax seeds, 3/4 cup chocolate chips, 3/4 cup flaked coconut, and 1/2 cup dried cranberries. Stir until everything is combined.

Drop into mini cupcake tin and bake at 350° for 12 minutes.
