Crack the eggs into a bowl and whisk.

Saute'' the mushrooms in coconut oil for 7 minutes. (Extra virgin olive oil is great too) then add the rest of the vegetables and saute for 5 minutes.

Pour the eggs over the sautee''d vegetables and continue stirring until the eggs are cooked to your liking. Enjoy!
