water or just enough to cover chicken

Place chicken and all the ingredients into a pot. Pour in just enough water to cover the ingredients.

Bring to a boil.

Once water has come to a boil. Lower to Medium low heat and simmer for about 1 1/2 hours.

When chicken and vegetables are cooked, remove both from the pot.

When chicken is cooled; skin, debone, and cut into small pieces. Place chicken back into stock.

When vegetables are cooled down a little, puree vegetables and mix back into soup. Freezes well.
