wash, pare and cube potatoes
place potatoes in a medium saucepan with enough water to cover
Bring water to BOIL
Cover with lid and PARBOIL potatoes for about 10 minutes
MINCE onion
JULIENNE green pepper
GRATE cheese
MELT butter in a large skillet
SAUTE onion and green pepper until tender
using a skimmer, remove onion and green pepper from skillet DON''T throw away the butter. Place onion and green pepper in a small bowl.
DRAIN potatoes in colander
FRY potatoes in butter in the skillet until BROWNED, about 10 minuets
Add onion and green pepper back in to the skillet with the potato.
