1Boil Quinoa in 2 cups water until tender. Set aside to cool.
2Whisk oil, cumin, and lime juice in a small bowl.
3In mixing bowl combine quinoa, black beans, and tomatoes. Pour dressing over and toss to combine. Serve warm or cool.
