put yeast,water and sugar in a bowl. Let sit for 10 minutes until foamy.

add flour and salt and 1 cup warm water. mix until shaggy dough forms. use dough hook to kneed on low for 10 minutes. cover bowl with plastic wrap and let rise for 2 hours.

divide dough into 10 pieces, roll each in a ball. cover and rest for 10 minutes.
place oven rack on lowest shelf setting, put your sheet pan on it. heat the oven as hot as it will go.

roll each ball out into a 6 inch circle, cook 2 at a time on preheated sheet. bake for 4 minutes on first side, 2 minutes on the other side until puffed.
