1put yeast,water and sugar in a bowl. Let sit for 10 minutes until foamy.
2add flour and salt and 1 cup warm water. mix until shaggy dough forms. use dough hook to kneed on low for 10 minutes. cover bowl with plastic wrap and let rise for 2 hours.
3divide dough into 10 pieces, roll each in a ball. cover and rest for 10 minutes. place oven rack on lowest shelf setting, put your sheet pan on it. heat the oven as hot as it will go. about 500
4roll each ball out into a 6 inch circle, cook 2 at a time on preheated sheet. bake for 4 minutes on first side, 2 minutes on the other side until puffed.
5cut into triangles for dip, or serve filled with your favorite ingredients.
