1Boil Rotisserie chicken and then pick out bones and skin. Saute onions, celery, and carrots in olive oil until soft. Throw chicken, veggies, rice, and chicken broth into stock pot and cook for about 30 min until thick. Add herbs, salt and pepper for taste (parsely, chives, thyme, oregano)
