1In a small bowl, whisk together 1 1/2 cups water and the peanut butter. Set aside.
2In a large skillet, heat 1/4-1/2 cup oil over medium heat. Add the chicken and cook until no longer pink, 3-4 minutes. Transfer to plate.
3In the same skillet, cook the carrots, scallions and broccoli for 30 seconds. Stir in the peanut butter mixture.
4Return the chicken and it''s juices to the pan and cook, stirring, until heated through; season with salt and pepper.
5Serve with cooked rice.
