1combine the oats and nuts in a large bowl. Combine the melted coconut oil, vanilla, and cinnamon in a small bowl until well combined. Pour this mixture over the oats and nuts until thoroughly coated. Place in a 350 degree oven for 10 minutes. stir and place back in the oven another 10 minutes until golden brown. Allow to cool completely before eating.
