Dice Garlic clove and Onion into small size pieces.

Add olive oil to fry pan and add in diced garlic and onion.

Saute garlic and onion in olive oil while you dice the tomatoes and red pepper.

Add in half the pinot grigio wine and reduce by half.

Remove the veggie mixture to a bowl.

Deglaze pan with remaining wine. Add in beaten veal scallapini pieces and cook 2 minutes.
