Quarter washed leeks lengthwise and then cut into 1/2" pieces, leaving about 1" of the bulb.

Chop 1/2 of a medium yellow onion roughly.

Melt butter into a medium or large soup pot.

Add leeks and onion to pot with melted butter. Cook with the lid on until soft, stirring occasionally.

Peel then chop potatoes into 1 inch cubes.

Add potato chunks to pot and cook about 2 minutes, stirring.

Add vegetable broth and salt to pot.

Let simmer covered for approximately 40 minutes.

Remove from heat and mash with a potato masher, or puree in parts in a blender.

Add half and half and pepper and serve.
