Choose medium head of cauliflower. Cut head in half, remove any leaves, and cut into florettes.

Wash cauliflower in strainer

Bring a saucepan of water t o a boil. Add a small pinch of kosher salt to water.

Add cauliflower and return to a boil. Boil for at least 30 minutes or until cauliflower can be easily pierced with fork.

Once done boiling, strain the water from the pot. Return the cauliflower to pot and with your potato smasher, mash them as if you are mashing a potato. Do this to the consistancy you like your regular potatoes.

Stir in soft cream cheese, chedder cheese and sprinkle garlic power and fresh ground black pepper to your taste.
