Saute vegetables in oil until they are nearly done. Pour into an 8x8 inch square pan that has been sprayed with Pam. Whisk eggs, yogurt, milk, salt and herb mix of your choice until well blended. Pour over the vegatbles and sprinkle with cheese. Bake at 325 gedrees for 40 minutes.
