1In a mixing bowl, whisk together the eggs, buttermilk, oil, vanilla extract and maple syrup.
2Add sugare and blitz for 1 minute until sugar dissolves.
3Add cocnut milk and lemon juice; blitz.
4Add yogurt and blitz.
5Pour mango mixture into shallow container, cover and place in freezer for 8 hours or longer.
