-saute onion, bell pepper, celery altogether until softened/translucent
-add 1:1 ratio low sodium organic veggie stock and water
- add lentils
- add canned, low sodium tomatoes with juice from can
- add spices including fresh herbs, including miso paste
- mix in miso paste well so clumps are not at the bottom
- check broth for taste, add spices as needed
- cover and let come to boil
-bring down to simmer
- cook for one hour on stove top
- let cool then serve
