Recipe Description A good low sodium diet alternative to just leaving out the salt. Coriander has 1mg of sodium compared for a teaspoon, compared to the 581 mg of sodium in the traditional 1/4 tsp of salt. This recipe will give you 8 slices cut crosswise (on the width of the bread) or four slices cut lengthwise. To use this recipe without a machine, be sure you are in a warm place, flour your work surface and knead until the dough is ready to form and rise and place it into a pan, rising until double and cooking it at 375 for 12 minutes.

1Mix together dry ingredients except for the yeast. Set your machine to handle a small loaf of bread (a dinner loaf will result from this recipe)
3Heat your 1/2 cup of water (If not already 80 to 90 degrees in temperature) to lukewarm. You will kill the yeast if it is too warm.
4Pour the water into the bread machine kneading receptacle.
5Measure 1 and 1/2 cups of your mixture into the kneading receptacle.
6Sprinkle one package of fast rising yeast over the top of your mix.
7As the machine kneads, watch to make sure that the dough forms into a wet sticky ball, just pulling away from the walls of the pan with no flour to the sides. Add a tablespoon of water at a time to be sure you have the right appearance for the dough.
8Let the machine finish the cycle for a small dinner loaf. Set out warm loaf to rest.
