1Rinse greens and pick out the larger stems. Melt butter with olive oil in a 5 qt stock pot. Sautee the onion and garlic in the fat. Add sugar, pepper, ham hocks and vinegar to the mixture. Add greens and then add stock (enough to cover the greens). Let simmer 1.5 to 2 hours. After 2 hours, remove the ham hocks and then pull any meat off of the bones and put back into the pot. Increase the heat to medium to reduce the liquid. Salt to Taste.
