Heat oil in large saucepan over medium heat for 1 minute. Add pork and cook for 3 minutes. turn pork and add garlic and ginger and continue cooking 3 minutes. Check for doneness.

Swirl in soy sauce and vinegar, scraping bottom of pan to deglaze it.

Remove pan from heat and stir in orange juice. Toss mixture with rice and steamed vegetables.
