1Melt coconut oil and allow to cool some, then mix all your wet ingredients together
2Mix all dry ingredients together well
3Stir wet into dry, mix well, no blender or mixer, just by hand
4let batter sit in fridge for about a half an hour
5spray 2 muffin tins and fill each 3/4 full
6when using pureed squash, this batter is very liquid
7bake @ 300 25-45 minutes, depending
