Half eggs and half egg beaters with light cottage cheese added for a creamy, full texture. I used thin sliced 97% fat free cooked ham lunch meat. This is SO easy to make. I beat the eggs and cottage cheese together for 1 minute with a whisk to blend, then add the rest of the ingredients. Spray a glass pie pan with PAM first, then add ingredients and bake at 375 for 30-40 minutes until a beautiful golden brown.
