Pat shrimp dry with paper towels.

Combine zucchini, onion and corn in a bowl; add remaining seasoning mix, toss.

Heat oil in a large skillet over medium high heat; add zucchini mixture, and cook 10 minutes or until tender.

Add shrimp and cook 2 to 3 minutes or until pink.

Serve shrimp and vegetables in tortillas; top with lettuce, tomato, and sour cream.
