Recipe Description
I wanted to make a low sugar, high protein cookie that would not upset my hypoglycemia issues. This is not a sweet cookie, but it satisfies.

Prepare cookie sheet with parchment paper. Preheat oven to 350 degrees.

Beat together the first six wet ingredients with a whisk.

In a separate bowl, blend the remaining dry ingredients.

Combine wet and dry ingredients, stirring until smooth, adding raisins last of all.

Bake for 16 minutes. Cool slightly and remove from pan.
