Healthy Crack cookies

Recipe Description
We love this as a healthy snack for that mid-afternoon pick-me-up. Oats are listed (too many times) as a possible substitution for 1/2 cup of spelt flour, but don't add it all! Coconut flour also absorbs a lot of moisture.
