Recipe Description We love this as a healthy snack for that mid-afternoon pick-me-up. Oats are listed (too many times) as a possible substitution for 1/2 cup of spelt flour, but don't add it all! Coconut flour also absorbs a lot of moisture.

Steps
Sequence Step
1Cream butter and sugars together. Add honey, eggs and yogurt. Beat well.
2In separate bowl sift dry ingredients together
3Add cranberries, coconut and chocolate chips to butter mixture
4While mixing, add dry ingredients and blend well. Let stand 5-8 minutes.
5Line cookie sheet with parchment paper and heat oven to 375 degrees F.
6Use soup spoon to scoop dough onto baking tray, and flatten slightly with fingers. Cookies will not spread.
7Bake until golden brown about 10 minutes. Let cool on tray 5 minutes before transfer to cooling rack.
