| 1 | In a large bowl, combine water, yeast and light brown sugar; mix well and let stand for 10 mins. Add buttermilk, orange juice, salt, honey, oil and eggs. Beat well. Add 1 cup whole wheat flour, wheat bran, oat bran, flaxseed, steel cut oats, cracked wheat, 1 cup bread flour and baking soda.; beat for 1 min. Let bread stand for 30 mins | 2 | Gradually add enough remaining whole-wheat flour, white bread flour and white whole wheat flour to form a firm dough. Turn onto floured surface and knead for 10 mins. Place dough in greased bowl, turning once to grease top. Cover and let rise for 1 hr. | 3 | Turn dough onto floured work surface and let rest for 10 mins. Grease 4 bread pans 9" x 5" and set aside. Punch down dough and divide into 4 parts. On a floured surface, roll or pat to 7" x 12'' rectangle. Roll up tightly, starting with the 7" side. Place in prepared pans. | 4 | Cover with towel and let rise til double, about 30 mins. Preheat oven to 350 degrees. Bake loaves for 35-45 mins or until golden brown. Brush each loaf with butter or Pam cooking spray and place on wire rack to cool completely. |
