This is a great side dish for any kind of grilled meat. You can control the 'heat' by adjusting the amount of jalapeno to your liking. You can also adjust amounts of all the vegetables to your liking.
Heat the oil in a skillet. Add zucchini, garlic, jalapeno, cumin, salt, and black pepper to taste (optional). Cook and stir 2-4 minutes or until zucchini and garlic are tender. Add remaining ingredients. Cook and stir gently until thoroughly heated.
