This is a great side dish for any kind of grilled meat. You can control the "heat" by adjusting the amount of jalapeno to your liking. You can adjust the amounts of the various vegetables to suit your taste. Use as side dish, or fun treated as a 'dip' with tortilla chips.

Prepare all ingredients. You can decrease sodium in recipe by also rinsing the canned vegetables as you drain them. Heat the oil in a skillet. (Other healthy oil choices for cooking: coconut oil or grape seed oil). Add zucchini, garlic, jalapeno, cumin. Cook and stir 2-4 minutes or until zucchini and garlic are tender.
