1. Preheat oven to 400 degrees.
2. Add the eggs to a large bowl and whisk until frothy.
3. Add the applesauce, coconut oil, baking soda, vanilla, cocoa powder, and coconut flour the bowl with the eggs and whisk until smooth.
4. Add about half of the chocolate chips and mix until incorporated.
5. Grease a muffin tin with a dab of coconut oil and fill each tin with the muffin mixture. Sprinkle remaining chocolate chips over the top of the muffins.
6. Bake for 13 -15 minutes, or until lightly browned and set in the middle
