1. Place nuts, flour, salt, and ginger in food processor and blend for 1 minute until nuts are as fine as the flour.
2. Combine the remaining ingredients and mix until the dough clumps.
3. Using a tablespoon or small ice cream scoop, measure a small portion of dough into your palm and lightly roll into a ball. Lightly press out the dough onto the cookie sheet and place 1 walnut in the center (for decoration).
4. Bake at 350 degrees F for 15-20 minutes. Let cool completely prior to storing or eating.
