combine the first 7 ingredients in a medium bowl.

The dough may be slightly sticky. Add more flour if needed to work with it.

Knead 5-6 times and let rest 15 minutes.

Combine 1 T butter and 1 T flour in a small saucepan. Heat on medium to melt the butter and make a roux.

Add the garlic and salt and pepper if desired until garlic is fragrant - 30 seconds or so.

Slowly add the skim milk. Boil 2 minutes or until thickened.

Remove from heat and add shredded parmesan. Stir until cheese is melted. This is your sauce.

Grill chicken breasts over med-high grill until no longer pink. Optionally, you can grill the onions and peppers at the same time.

Divide your pizza dough in half. Roll into 9-inch rounds.

Spread half of the sauce onto each crust.

Slice the grilled chicken into bite-sized pieces.

Divide the chicken, sliced tomato, onions, peppers and mushrooms evenly over the pizzas.

Sprinkle the Colby or Colby-jack cheese evenly over each (it will not be covered in cheese)

Bake at 425 degrees for 15 minutes.
