Heat olive oil in heavy skillet.

Sprinkle oregano and Montreal seasoning over chicken pieces and pat in, on all sides. On medium heat, cook chicken breasts, turning once, until juice is clear when pierced with a fork. That took me about 6 minutes on each side. The rub on the outside of the chicken will turn black, but still taste good.

Remove chicken and melt butter in same pan. Add onions and mushrooms and cook until onions are tender.
