1Boil water and chicken stock
2Add Black Rice, bring back to boil. Cover and simmer for 30 minutes
3Chop vegetables
4Let cook rice cool to room temperature.
5Mix Olive Oil
6Add all ingredients to large bowl and toss
7Add salt and pepper to taste
