In large mixing bowl mix dry ingredients.

Add water and mix until shaggy mixture forms.

Cover with plastic wrap and let rise for 18 hours.

Heat oven to 450 degrees. When at temp, place a covered cast iron pot in hot oven and heat for 30 mins.

Meanwhile pour dough onto heavily floured board surface and shape into a ball. Cover with plastic wrap and let set while pot is heating.

Remove pot from oven and drop in the dough. Cover and return to oven for 30 mins.

After 30 mins remove lid and bake 15 mins more.

Remove bread from oven and place on a rack for cooling!
