dice bacon and cook in large pot over medium heat until crispy (about 6-8 minutes). set bacon aside in a bowl.

melt butter in same large pot. add chopped carrots and celery. cook 3 minutes.

add roughly chopped cauliflower and basil. cook 3 minutes.

add corn starch. cook 1 minute stirring constantly.

slowly whisk chicken broth and milk. continue to whisk for 3 minutes.

increase heat to bring to a boil. reduce heat and simmer uncovered 13 minutes, stirring occasionally.

add in 1 cup of shredded cheddar and whisk to mix. continue to simmer an additional 2 minutes.

serve immediately. top with additional cheddar and bacon pieces.
