1Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook to al dente, about 10 minutes.
2Heat 1 tablespoon olive oil in a skillet over medium heat. Place chopped bacon in the skillet and cook until browned and crisp. Add garlic and cook for about 1 minute. Stir in tomatoes and cook until heated through.
3Place the spinach in colander and drain hot pasta over it so it is wilted. Transfer to a large serving bowl and toss with remaining oil. Add tomato mixture, stir gently; serve.
