Cook pasta for 6 to 7 minutes just short of done.

Drain and rinse pasta and add 1 tablespoon of oil to coat the pasta.

Heat pan with remaining oil, then add all prepared vegetables except parsley.

Cook quickly for 4 minutes so vegetables stay crunchy.

Add pepper, salt, parsley and the pasta.

Cook vegetables and pasta 1 more minute.

Turn off heat, add vinegar, combine again.
