stalk, large (11"-12" long)celery, chopped

Steps

1Cook pasta for 6 to 7 minutes just short of done.
2Drain and rinse pasta and add 1 tablespoon of oil to coat the pasta.
3Heat pan with remaining oil, then add all prepared vegetables except parsley.
4Cook quickly for 4 minutes so vegetables stay crunchy.
5Add pepper, salt, parsley and the pasta.
6Cook vegetables and pasta 1 more minute.
7Turn off heat, add vinegar, combine again.
8Serve hot and enjoy!
