1. In a large bowl, whisk together the buckwheat flour, tapioca starch, and salt and set aside.

2. In a small bowl, combine the yeast, sugar, and 0.5 cup warm water and allow it to proof for 15 minutes.

3. Using a hand mixer, mix the yeast mixture into the flour mixture, then mix in the eggs and oil.

4. Mix the apple butter and ¾ cup water into to batter; it will be runny, like pancake batter.

5. Cover the bowl and let the dough rest for 40 minutes.

6. Position an oven rack in the center of the oven and reheat to 350o F.

7. Grease a 4.5 x 8 inch loaf pan.

8. Scoop the batter into the loaf pan and bake for 20 minutes.

9. Then cover the loaf with a foil tent, and bake for 40 minutes, or until the sides and bottom sound hollow when tapped.
