Cook carrots in 1 Tbsp virgin coconut oil or olive oil
Chop kale while carrots cook. (About 6-8 min). Throw in kale. Add 6 cups of water or stock.
Add cup of quinoa. Bring to Boil then reduce to simmer until quinoa is cooked. (approx 15-20 min)
Add beans and tomatoes last when everything else is cooked.
You can also add spices if you like. I used smoked paprika, corriander, and cumin.
