chop cauliflower. Bring vegetable broth to boil add cauliflower. Cook until soft, (about 15 min) melt butter in large skillet medium heat, add garlic and saute 4-5 minutes.

Transfer cauliflower to blender with 2 cups of broth, add sauteed garlic, salt, nutmeg and pepper. Puree until very smooth. (about 5 minutes) Once mixture is moving stream the olive oil into the blender.

Transfer back to the butter/garlic skillet. Add cream and cook over low heat. Add water and keep warm until ready to serve.
