Saute onions in butter over medium low heat until caramelized.

Put the cauliflower in a covered casserole dish with 1 tablespoon of water. Cover and microwave on high 5 minutes, stir, then microwave on high another 5 minutes. Drain off any excess water.

Put the cauliflower in a food processor with the chopping blade inserted. Add the cream and a little salt and process until very smooth.

Transfer cauliflower to a serving bowl and stir in the caramelized onions. Salt and pepper if necessary.
