preheat oven to 400 degrees

saute chopped mushrooms and onion in butter until onions are translucent.

Slice the top off of each of the green peppers, leaving the peppers intact for stuffing. Scoop out the inside of the peppers to remove seeds.

In a large bowl, combine the onion and mushroom mixture, the rice, the browned meat, and the tomato sauce (add seasonings like oregano or thyme if you like).

Stuff the peppers with the filling, packing it down to make sure the peppers are filled.

Stand the peppers in a baking dish and bake at 400 degrees for 35 mins. I use a round cake pan for this. If the peppers are unstable, you can tie a loop of cotton string around them to hold them upright while they cook.
