cupsPeppers, sweet, green chopped

can (16 fl oz)tomatoes, canned with green chilies

tablespoonTaco Seasoning

cupsBaby Spinach Leaves, raw

cup, shreddedshredded cheddar cheese

stalkgreen onion tops, chopped
Steps
Sequence Step
1In a large pan, lightly brown ground beef and crumble well.
2Drain excess fat.
3Add onions and peppers, and cook until browned.
4Add canned tomatoes, taco seasoning, to taste and any water needed for taco seasoning to evenly coat mixture (up to 1 tbsp.-the liquid from the tomatoes will help)
5Add greens and full wilt.
6Mix well.
7Cover with shredded cheese and let cheese melt.
8When cheese is melted, serve over a bed of lettuce.
