In medium saucepan, combine cranberries, 6 Tbl sugar, orange juice, orange peel

Combine gelatin and water in cup. Warm gelatin in microwave for 10 seconds. Pour into cranberry mixture, stirring constantly.

Chill mixture for 20 minutes.
Beat Rich Whip non-dairy topping until stiff peaks. Fold into cooled cranberry mixture and spoon into parchment lined springform pan. (Can be spooned into GF cracker crust if desired.)
Chill at least 3 hours. Garnish with dark chocolate shavings.
