put lentils, onions,ginger, garlic in a food processor until they are a smooth mass.

Put in large bowl and add wheat gluten. Mix thoroughly.

Cut into pieces and boil in water for 30-40 minutes. Note: it is vital to cook very slowly. Do not boil or the seitan will become soft and spongy. You can also wrap the pieces loosely in tin foil and stream for 30-40 minutes. This will give you the firmest result.
