dissolve yeast in warm water. add shortening, salt, sugar and 3.75 cups of flour. mix well. add enough additional flour to make easy to handle. roll onto flour covered board and knead for 10 minutes. place in bowl, cover, let rise one hour, or until double, in warm/dry place. punch down and divide in two. roll into rectangle, then roll rectangle starting on short side. fold edges under and place in 2 greased and floured loaf pans. let rise one hour, or until double. bake at 350 for 30-35 minutes. should sound hollow when done.
