Sear boneless porkchops in 1 T olive oil. Remove from pan and pour off grease/oil. Add 2 T Olive Oil. Add garlic and onions and saute til sweated but not soft. Add peppers and mushrooms and saute til soft. Add tomatoes and chicken broth and simmer 10 minutes. Nestle in pork chops, add herbs and Parmesan cheese and if desired salt and pepper. Serve over whole grain noodles, riced cauliflower, etc
